Tzatziki

Ingredients

  • 2 cups whole milk yogourt(500 milliliters) or plain Greek yogourt
  • 1 large English cucumber, peeled and grated
  • 2-3 cloves garlic, minced
  • salt and pepper to taste
  • fresh chopped mint –optional

Directions

  1. Line a colander or sieve with cheesecloth and place it over a bowl.
  2. Add the yogourt and allow to drain in fridge for two hours or more. You can also just use a Greek yogourt and just skip the draining part.
  3. In a medium bowl, combine the drained yogourt with garlic and grated cucumber.  Season to taste and add the chopped mint, if desired.
