Tuile garnishes

Ingredients

  • 1 egg white
  • 1/4 cup (60 grams) sugar
  • 2 tablespoons (30 grams) flour
  • 2 tablespoons (30 grams) melted butter
  • Pinch of salt

Optional toppings:

  • 1 tablespoon (30 grams) black sesame seeds
  • (Sesame seeds can be substituted for poppy seeds, chopped nuts, herbs or any savoury or sweet garnish as desired).

Directions

  1. Preheat oven to 350°F (176°C).
  2. Whisk egg white until foamy, then whisk in sugar and flour.
  3. Stir in melted butter and pinch of salt.
  4. Spread batter onto silicone baking mat in thin circles or lines using back of spoon or offset spatula. Optional: Use tape to create stencils for geometric shapes.  
  5. Sprinkle black sesame seeds or substitutes onto batter.
  6. Bake until the garnish starts to brown at edges. Remove from oven and immediately shape while warm. Shaping ideas include: bending baked piece around rolling pin, twisting or rolling baked piece, or gently folding baked piece to shape.
  7. Allow to cool.
