Tropical granola cups

Sure, sure...we know it’s good for us but if you’ve spent years doing the granola/Greek yogurt combo for breakfast, you probably find yourself groaning for something new. If you want to revive your love of granola, look no further than these delicious Tropical Granola Cups that are packed with cashews, coconut, and yummy tropical fruit that is a nice departure from your usual berry topping. The best part is that these adorable cups can be made in advance and eaten on the go. Plus, they’re just perfect for the kids.

Ingredients

  • 1-1/2 cups old-fashioned rolled oats
  • 3/4 cup chopped cashews
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup coconut oil
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup coconut yogurt
  • 1 kiwi, diced
  • 1/4 cup diced pineapple
  • 1/4 cup diced mango

Directions

  1. Preheat the oven to 325ºF. Line or grease a six-cup muffin tin. Set it aside.
  2. In a large bowl, mix together the oats, cashews, coconut oil, honey, shredded coconut, and vanilla extract.
  3. Scoop the mixture into the muffin tin and pack it down to form a well in the centre of each granola cup. Bake the granola cups until they are lightly golden, about 15 to 20 minutes.
  4. Allow the cups to cool completely before removing them from the tin. Fill the cups with the coconut yogurt and top them with the chopped fruit.
  5. Serve immediately.
