Tomato granité

  • 600 grams very ripe tomatoes, chopped
  • 600 grams watermelon
  • 1 teaspoon (5 milliliters) salt
  • 1/4 cup (60 milliliters) sugar
  • 1 tablespoon (15 milliliters) lime juice
  • 2 tablespoons (30 milliliters) mint, finely chopped


  1. In a blender place the tomatoes, watermelon, salt, sugar, and lime juice. Blitz.
  2. Strain the mixture, through a fine sieve, into a bowl. Pour the blitzed mixture into a baking sheet. Add the mint to the mixture and stir.
  3. Freeze the liquid until frozen around the edges and slushy in the middle.
  4. Using a fork, stir the mixture to break up the ice into smaller ice crystals. Return the pan to the freezer.
  5. Repeat the process every half hour until it’s completely frozen and the texture of a snow.
