Tomato and meat sauce

Total Time


  • 3 tablespoons olive oil
  • 330 grams lean ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, chopped, optional
  • Several sprigs fresh thyme
  • Chile flakes, optional
  • 1 bay leaves
  • 1 teaspoon dried oregano, optional
  • One 784 gram can plum tomatoes with juice, chopped
  • Sea salt and freshly cracked black pepper
  • 1 bunch fresh basil, washed, stemmed and chopped


  1. In a large skillet, heat the olive oil on medium high. 
  2. Add the ground beef and brown , stirring frequently, until dark brown and caramelized , about 13-15 minutes. 
  3. Add the chopped onion and sauté three to four minutes or until soft.
  4. Add the garlic and sauté for three minutes just to soften.
  5.  Add the thyme sprigs, bay leaves, oregano, tomatoes and salt and pepper and bring to boil.
  6. Reduce heat to low and simmer, covered, for 55 to 60 minutes or until sauce is thickened and flavour has developed to your liking.
  7. Add the fresh basil and adjust seasoning.
