Tofu poke bowl

Ingredients

FOR THE POKE

  • 1 Package Extra Firm Tofu
  • 1/2 cup, Soy Sauce
  • 2 tablespoons, Sesame Oil
  • 1 tablespoon, Grated Ginger
  • 1/2 teaspoon, Brown Sugar
  • 1/2 teaspoon, Red Chilli Flakes

TO ASSEMBLE

  • Warm Jasmine Rice
  • Thinly sliced Cucumbers
  • Thinly sliced Avocado
  • Thinly sliced Radishes
  • Thinly sliced Green Onions
  • Pickled Japanese Ginger
  • Edamame
  • Toasted Sesame Seeds

Directions

  1. Place Tofu between a few layers of paper towel, and top with a cutting board and weight it down with cans, etc. Allow to drain for 30 minutes.
  2. Cut Tofu into small cubes, and place in a bowl with remaining Poke ingredients. Stir to combine, and place in fridge for an hour to marinate.
  3. To assemble bowl, start with a base of warm rice, and top with Poke and remaining toppings to your liking.
