The strawberry and the shrub

Ingredients

Strawberry shrub:

  • 2 1/2 cups of strawberries (hulled and quartered)
  • 1 cup of granulated sugar
  • 1 1/2 cups apple cider vinegar

Cocktail:

  • 1 part Strawberry Shrub
  • 1 part aperol
  • 4 parts Saison beer
  • 1 strawberry (sliced)

Directions

Strawberry shrub:

  1. Grab a mason jar and add your strawberries and sugar. Tighten the lid, give this a shake and place it into the fridge for two hours.
  2. Add vinegar and cover. Keep this in the fridge for two days.
  3. Strain the strawberries through a fine mesh strainer.
  4. Pour the shrub into a new sterile mason jar. Close lid and store it in the fridge. This can be stored for months on end, just make sure your mason jar is sterile.

Cocktail:

  1. Layer your pilsner glass with ice and your sliced strawberries.
  2. Add the aperol and strawberry-infused shrub, and top it up with the Saison beer. Stir before drinking.
