Spicy cucumber salad

Ingredients

Cucumbers:

  • 1 cucumber
  • Salt

Dressing:

  • 2 limes, juice
  • 2 teaspoon (10 milliliters) fish sauce
  • 1/4 cup (60 milliliters) vegetable oil
  • 1/2 teaspoon (2.5 milliliters) chili flakes
  • 1 tablespoon (15 milliliters) sugar
  • 1 tablespoon (15 milliliters) honey

Salad:

  • 1 cup (240 milliliters) bean sprouts
  • 1 small red onion, julienned

Garnish:

  • Cilantro
  • Mint
  • Peanuts, crushed

Directions

Cucumber:

  1. Slice cucumber into thirds, and peel into ribbons lengthwise. Place onto sheet pan, sprinkle with salt and let it sweat for five minutes.

Dressing:

  1. In a bowl combine lime juice, fish sauce, vegetable oil, chili flakes, sugar, and honey.

Salad:

  1. In a large bowl, mix cucumbers, red onion, and bean sprouts. Dress and toss.

To serve:

  1. Garnish with cilantro, mint, and peanuts.
