Small batch cheddar garlic biscuits

Ingredients

  • 3/4 cup + 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon dry Italian seasoning or 1 teaspoon finely chopped fresh herbs
  • 1/4 teaspoon kosher salt
  • 1/3 cup cold unsalted butter, cut into pats
  • 3/4 cup grated cheddar cheese
  • 1/2 cup buttermilk*

Directions

  1. Preheat your oven to 425ºF and line a baking sheet with parchment paper. If you do not have parchment, grease the sheet with non-stick cooking spray.
  2. In a bowl, stir together the flour, baking powder, garlic powder, dry Italian seasoning or chopped herbs, and kosher salt. Add in the cold butter pats and snap and rub it in like you would for pie dough until the butter is about the size of peas. Stir in the grated cheddar cheese then make a well in the centre and add in the buttermilk. Stir just until combined adding a bit more flour or a splash more buttermilk if needed.
  3. Using a large tablespoon or a 60 milliliter disher, scoop four equal biscuits onto your prepared baking sheet. Bake in the preheated oven for 18 to 20 minutes or until golden brown and the tops spring back when touched.
  4. Allow the biscuits to cool slightly or fully before enjoying.
  5. *To make a homemade substitute for buttermilk, simply whisk 1-1/2 teaspoons of lemon juice, white vinegar, or apple cider vinegar into 1/2 cup of milk and set aside for five minutes.
