Simple vanilla celebration cake

Rodney Bowers got a lesson in baking and cake decorating from a talented 9 year old Billie!

Ingredients

  • 1/3 cup butter, softened
  • 3/4 cup sugar
  • 1 egg
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • A pinch of salt
  • 1/2 cup milk
  • 1 teaspoon vanilla extract

For the buttercream icing:

  • 1 cup icing sugar
  • 3/4 cup egg whites
  • 2 cups (1 block) unsalted butter, at room temperature
  • A pinch of salt
  • 2 tablespoons vanilla extract
  • Any additional flavoring to taste (ex. strawberry puree, Oreo crumbs, cream cheese etc.)

Directions

For the cake:

  1. Beat the butter and sugar. Cream until colour turns pale.
  2. Gradually add eggs one at a time. Scrape the bowl and make sure everything is combined.
  3. Combine the dry ingredients.
  4. Combine the wet ingredients.
  5. Add alternating dry and wet ingredients in to the batter.
  6. Bake for ten to 13 minutes at 325°F, or 25 to 30 mins for a 15 centimeter cake.

For the icing:

  1. Cook sugar and egg white over a double boiler until 160F.
  2. Beat the meringue into hard peaks with whisk and let it cool down.
  3. Add in salt.
  4. Add chucks of soft butter and vanilla extract with a paddle until is smooth.
  5. Add in your additional flavorings.
