2 large bunches of broccolini or broccoli rabe, washed and stems trimmed
2 tablespoons olive oil
1 teaspoon chilli flakes
3 cloves of garlic, thinly sliced
½ cup goat cheese
¼ cup toasted pine nuts
Salt and pepper to taste
1 lemon, zested
Extra virgin olive oil for garnishing
Bring a large pot of water to boil. Salt the water. Blanch the broccolini for about two minutes each. Then place into a bowl filled with ice and water to stop the cooking process.
In a large skillet on medium-high heat warm the olive oil and the chilli flakes. Then add the garlic and cook until golden. Reduce the heat to medium and add in the broccolini. Toss together and warm through about five to seven minutes. Season with salt and pepper.
Plate the broccolini then using your hands crumble the goat cheese. Top with pine nuts, freshly grated lemon zest and some extra virgin olive oil.
