Radicchio salad

Ingredients

  • 1 head radicchio, torn into bite-sized pieces
  • 1 cup (240 milliliters) white kidney beans
  • 1/4 cup (60 milliliters) olive oil
  • 3 tablespoons (45 milliliters) balsamic vinegar
  • 1/2 teaspoon (2.5 milliliters) salt
  • 1 teaspoon (5 milliliters) ground black pepper
  • 1/2 cup (120 milliliters) grated Parmesan

Directions

  1. Add radicchio and white kidney beans to a large bowl and drizzle with olive oil and balsamic vinegar, then sprinkle with salt and ground black pepper. Toss to coat thoroughly. Top with grated Parmesan.
