Pulled pork banh mi sandwich

Ingredients

  • 1 French baguette, cut into 4 pieces, each sliced in half leaving a hinge uncut
  • 2 tablespoons unsalted butter, softened (25 millilitres)
  • 1 pound cooked pulled pork, warmed (450 grams)
  • 2 tablespoons sweet chili sauce (25 millilitres)
  • 1 head lettuce, finely shredded
  • 1 English cucumber, cut in julienne strips
  • ½ cup shredded carrots (125 millilitres)
  • Gherkin pickles, sliced
  • Several sprigs fresh coriander, stems removed

Directions

  1. Spread bread evenly with butter on both sides, making sure not to bread in half so sauce won’t leak out.
  2. To assemble sandwich, arrange the meat in each sandwich, drizzling with some of the sauce.   Top with shredded lettuce, carrots and cucumbers.  Drizzle with chili sauce and garnish with fresh parsley or coriander and gerkins.
