In a bowl combine the water, dry yeast and honey until the yeast is dissolved. Add in the olive oil. Add in 2 cups of flour and combine. Then add in the salt and remainder 2 cups of flour.
Roll out on a floured board and knead the dough for about 10-12 minutes. Form into a ball - a stand up mixer is a great way to do this.
In a greased bowl, place the dough and cover with plastic wrap and place a dish cloth over. Set aside in a warm place in your kitchen and allow the dough to rest at least 1 hour before using it. If you are not using it right away simply place in the fridge for up to 3 days in advance and remove from the fridge at least an hour before using it.
