Pear and blueberry clafouti

Ingredients

  • 2 pears
  • 3 eggs
  • 1/2 cup (120 milliliters) sugar
  • 1 teaspoon (5 milliliters) vanilla extract
  • 1 cup (240 milliliters) whole milk
  • 1/2 tablespoon (7.5 milliliters) lemon zest
  • 1/2 teaspoon (2.5 milliliters) salt
  • 1/2 cup (120 milliliters) all-purpose flour
  • 1/2 cup (120 milliliters) blueberries
  • Icing sugar, for dusting
  • Vanilla ice cream, for serving

Directions

  1. Preheat oven to 325 F (160 C).
  2. Peel, core, and quarter the pears, then cut into thin slices. Set aside.
  3. In a large bowl, whisk together eggs, sugar, vanilla extract, milk, lemon zest, salt, and flour until smooth. Pour mixture into a greased round, shallow baking dish, then top evenly with pears and blueberries. Bake in the oven until golden brown and set, about 25-30 minutes.
  4. Remove from the oven, let cool for a few minutes, then dust with icing sugar. Serve topped with scoops of vanilla ice cream.
