Peanut butter brownies

Ingredients

  • 2 eggs
  • 1 teaspoon (5 milliliters) vanilla extract
  • 1/4 cup (60 milliliters) almond milk
  • 2/3 cup (160 milliliters) oat flour
  • 1 teaspoon (5 milliliters) baking powder
  • 1/4 teaspoon (2 milliliters) salt
  • 1/2 cup (120 milliliters) cocoa powder
  • 3/4 cup (180 milliliters) coconut sugar
  • 1/2 cup (120 milliliters) coconut oil, melted
  • 1/2 cup (120 milliliters) cacao nibs
  • 3/4 cup (180 milliliters) smooth natural peanut butter

Directions

  1. Preheat oven to 350F (180C).
  2. Crack eggs into bowl and beat. Add vanilla, almond milk, baking powder, salt, coconut sugar, melted coconut oil, cocoa powder, cacao nibs and stir to combine.
  3. Stir in oat flour.
  4. Pour brownie batter into prepared dish.
  5. Add peanut butter in spoonfuls.
  6. Run a knife through the batter to create swirls with the peanut butter.
  7. Bake for 20-25 minutes in a greased baking pan.
  8. Cool completely before cutting and serving.
  9. Enjoy!
