Olive and raisin relish

  • 1 cup pitted green olives
  • 1/3 cup sun-dried tomatoes
  • 1/3 cup raisins
  • 1/2 teaspoon dried mint
  • Juice of 1 lemon
  • 1/3 cup olive oil
  • Salt to taste

To plate (serving suggestions):

  • 1 cup cooked rice/pasta/quinoa/couscous
  • Sliced grilled chicken
  • Cucumber tomato salad


  1. Top raisins with hot water, allow to soak until plump, and then drain. 
  2. Coarsely chop olives and tomatoes, and add to a bowl along with raisins. Add mint, lemon, olive oil, and salt to taste. Stir to combine.
  3. To assemble, toss three to four tablespoons of olive and raisin relish into the cooked grain of your choice. Transfer to a bowl and top with grilled chicken, and cucumber tomato salad. Top with a spoonful or more of relish as desired. Enjoy! :)
