No bake bars

  • 2 cups quick cooking oats
  • 1/2 cup natural nut butter
  • 1/2 cup maple syrup
  • 1/4 teaspoon salt, optional
  • 1/2 teaspoon cinnamon, optional
  • 1 teaspoon vanilla extract, optional
  • 3-4 tablespoons of your choice of add-ins


  • Mini chocolate chips
  • Pulverized freeze-dried fruit
  • Minced dates, raisins, cranberries
  • Minced almonds, pecans, pistachios, seeds, coconut
  • Hemp hearts
  • Flax


  1. Line a 9-inch square pan with parchment paper and set aside. 
  2. Put the oats in a large bowl. 
  3. In a small saucepan over medium-high heat, bring the maple syrup to a boil. 
  4. Once it's bubbling, mix it in the oats, along with the peanut butter, any of the optional ingredients and your "add ins." 
  5. Quickly mix everything together as it will become very hard to mix if you wait. 
  6. Transfer the mixture to the lined loaf pan and press down very hard to pack it tightly - This will help the bars stay together. 
  7. If you want to add more toppings, go for it now. 
  8. Put the pan in the fridge or freezer for one hour, then using a serrated knife, cut it into 16 bars.
