  • 2 cups feta cheese, sheep or cow (not goat), crumbled and firmly packed
  • 1 1/2 tablespoons pomegranate molasses
  • 1 teaspoon butter, softened
  • 1/4 cup + 2 tablespoons fresh mint, finely sliced
  • /4 cup + 1/4 cup pistachios, chopped
  • 1/4 cup toasted sesame, to coat

  1. Cream together first four ingredients in medium sized mixing bowl, using large wooden spoon.
  2. Gently fold in quarter cup each mint and pistachios.
  3. Chill in fridge, covered, for four hours.
  4. When fully chilled and easy to handle, roll quickly into ball shape, then roll in reserved nuts, sesame and mint.
  5. Serve with crostini, ciabatta and crackers.
