Mediterranean pita pizzas

2 SMALL PITAS
TOTAL TIME

Ingredients

  • 1/2 cup hummus, homemade or store bought
  • 2 small whole wheat pitas
  • 1/2 cup chopped baby spinach
  • 1/2 cup halved cherry tomatoes
  • 2 tablespoons chopped pitted Kalamata olives
  • 2 tablespoons crumbled feta cheese
  • 1 tablespoon Greek Seasoning

Directions

  1. Preheat the oven or toaster oven to 375F.
  2. Spread a layer of hummus over each pita. Top evenly with the baby spinach, tomatoes, olives, and feta. Sprinkle with the Greek Seasoning.
  3. Arrange the pitas on a baking sheet and bake for eight to ten minutes, until the spinach has wilted and the cheese is just golden.
  4. Enjoy immediately.
