Mediterranean chicken salad

Try these out for dinner tonight for a protein-filled meal that has plenty of probiotics. Healthy and yummy, this recipe will leave you satisfied for hours.

Ingredients

  • 2 cups cooked and shredded chicken
  • 1/2 cup finely diced cucumber
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped Kalamata olives
  • 1/4 cup chopped roasted red peppers
  • 1/4 cup crumbled feta
  • 1 lemon, zest and juice
  • 3 tablespoons minced red onion
  • 1 tablespoon freshly chopped parsley
  • 1 tablespoon capers
  • 1 teaspoon Greek seasoning

Directions

  1. Mix all of the ingredients together in a large bowl. Serve on top of some mixed greens, in a sandwich or in a lettuce or tortilla wrap.
  2. Enjoy!
