Mango mojito popsicles

We've all let fruits and veggies sit a little too long before having a chance to use them, but rather than tossing them straight into the compost, Vijaya shares an easy and safe way to use them up.

Ingredients

  • 2 cups, chopped overripe mango
  • Juice of 1 lime
  • 2 tablespoons sugar
  • 8 mint leaves
  • Pinch of salt
  • 1/2 cup water

Directions

  1. In a blender, add all ingredients and puree until smooth. Pour into popsicle molds and freeze until solid.
  2. To unmold, run molds briefly under warm water and remove popsicles.
