Mama's guacamole

Ingredients

  • 4 ripe avocados
  • 6-8 medium tomatillos
  • 1-2 peeled cloves of garlic
  • 1/4-1/2 jalapeno or serrano pepper, stems removed (or to taste)
  • 1-2 limes juiced (or to taste)
  • 1 teaspoon of salt (or to taste)
  • 1/2 white onion finely chopped
  • Handful of cilantro leaves coarsely chopped, stems removed
  • 1 large tomato, seeds removed, chopped into small squares

Directions

  1. Using a spoon, scoop out avocado flesh in a serving bowl and set aside.
  2. In a blender, blend the tomatillos, garlic cloves, jalapeno (if using), one lime juice and one teaspoon of salt.
  3. Using a fork, gently mash the avocado flesh and the tomatillo mixture together.
  4. Stir in the chopped white onion, cilantro and tomato
  5. Season with lime juice and salt to taste.

NOTE: leave a couple of avocado pits in the guacamole to make it last longer!
