Lemon lassi

Ingredients

  • 240 milliliters good quality fresh plain yogurt
  • 200 milliliters water
  • 3 tablespoons sugar, or to taste
  • 2-3 teaspoon lemon juice, or to taste
  • Fine zest of 1-1/2 small lemons
  • Ice cubes, to serve
  • 2 sprigs of fresh mint

Directions

  1. Blend together the yogurt, water, sugar, lemon juice and zest until light and frothy.
  2. Adjust the sugar and lemon to taste.
  3. Pour into tall glasses filled with ice cubes and the mint then serve.
