Leftover quesadillas

Running out of ideas for back to school lunches? Leftover quesadilla's are the perfect choice - they're easy to make and your kids will love them so much they definitely won't be bringing it back home.

Ingredients

  • 2 to 3 cups leftover filling
  • 2 teaspoons vegetable oil
  • 4 large whole wheat flour or corn tortillas
  • 2 cups shredded cheddar

Directions

  1. Prepare the filling: pick a few of the suggested filling ingredients above, enough to make two to three cups of total.
  2. If using raw ingredients, cook before making quesadillas. leftover are fine cooked and cold.
  3. Add the oil to a large non stick pan the skillet on medium heat .use just enough to coat the bottom — about 1/2 teaspoon per.
  4. Add the tortilla and top with cheese: lay one tortilla in the skillet and sprinkle all over with 1/2 cup of cheese.
  5. Add the filling: spread roughly 1/2 cup of filling in a single layer over half the tortilla.
  6. Once the cheese melts begin lifting to see when the tortilla starts to brown that’s when you know it’s ready
  7. Fold the quesadilla in half using a spatula the spatula .
  8. Cut into wedges and cool. Ready to pack
