Grilled plum sundaes with a ginger pistachio crumble

Ingredients

  • 6 ripe plums, pitted and cut in half
  • 1 tablespoon honey
  • 1/2 cup ginger snap cookies, crushed
  • 1/2 cup pistachios, chopped
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup unsalted butter
  • 1 teaspoon kosher salt
  • 2 pints of vanilla ice cream

Directions

  1. To a bowl add crushed ginger snap cookies, chopped pistachios, rolled oats, brown sugar, melted butter and salt. Set aside.
  2. Per-heat BBQ to medium high heat. Brush each plum with some honey and grill for about five minutes. Set aside.
  3. To make the sundaes, scoop the vanilla ice cream into a bowl, top with grilled plums and ginger pistachio crumble. Enjoy!
