Grilled pineapple with lime mint sugar

Ingredients

  • 1 peeled and cored pineapple
  • 8 skewers
  • 2 tablespoons rum (optional)
  • ⅓ cup granulated sugar
  • 1 lime, zested
  • 1 tablespoon minced mint

Directions

  1. Preheat BBQ to high heat. Brush grill grates clean.
  2. Cut pineapple lengthwise into 8 wedges, skewer lengthwise and generously brush with rum.
