Grilled pineapple pickles

  • 1 pineapple
  • 1 teaspoon chili flakes *more if you like spicy
  • 2 cups white sugar
  • 2 cups rice wine vinegar
  • 1 cup water
  • 2 tablespoons salt


  1. Mix vinegar, water, salt and sugar together. Add chili flakes.
  2. Peel and core your pineapple, and grill.
  3. Slice into thick one centimeter slices.
  4. Add pickling liquid to the pineapple and let it sit in a mason jar for at least two days. Use as needed.
