Grilled broccoli Caesar with creamy dressing

Ingredients

  • 2 heads broccoli, cut into long spears
  • 2 tablespoons canola oil
  • Salt to season

Dressing:

  • 2 tablespoons mayonnaise
  • 3 tablespoons plain yogurt
  • 1 tablespoon olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon white wine vinegar
  • 2 teaspoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 1 clove garlic, finely minced
  • 1/4 teaspoon freshly ground pepper

Garnish:

  • 3/4 cup bacon bits
  • 1/2 cup grated parmesan

Directions

  1. Preheat the BBQ to 400F
  2. Toss the broccoli spears with the canola oil and salt.
  3. Lay the broccoli on the grill and cook, turning occasionally until the broccoli is slightly charged and cooked tender crisp. Remove and place on a serving platter to cool.
  4. Whisk together all the ingredients for the dressing. Drizzle it over the top of the broccoli and garnish with bacon bits and parmesan.
