Greek country salad

Ingredients

  • 2 tablespoons (30 milliliters) red wine vinegar
  • 1 teaspoon (5 milliliters) Dijon mustard
  • 1/4 cup (60 milliliters) olive oil
  • 1 teaspoon (5 milliliters) dried oregano
  • 1/2 teaspoon (2.5 milliliters) salt
  • 1 teaspoon (5 milliliters) ground black pepper
  • 1/2 cucumber, chopped
  • 2 medium tomatoes, cut in wedges
  • 1/2 green pepper, chopped
  • 1/2 red pepper, chopped
  • 1/2 red onion, sliced finely
  • 114 grams feta, sliced
  • 1 cup (240 milliliters) Kalamata olives, pitted

Directions

  1. Add red wine vinegar, Dijon, olive oil, dried oregano, salt, and pepper to a large bowl and whisk together.
  2. Add cucumber, tomatoes, green pepper, red pepper, red onion, and Kalamata olives to the bowl and toss with dressing.
  3. Top with feta slices.
