Gluten-free mushroom onion gravy

Most people agree that gravy makes everything at your holiday dinner table taste so much better. But gravy without flour? Yes, it’s possible! This recipe uses finely ground chia seed to thicken it up.

Ingredients

  • 3 cups onion, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoon Herbamare seasoning (or sea salt to taste)
  • 2 tablespoons coconut oil
  • 2 cups mushrooms (your choice of type), chopped
  • 2 cups beef or turkey or veggie broth (depending on how thick you like it)
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon ground chia seeds

Directions

  1. Sauté onions, Herbamare (salt) and garlic in coconut oil over medium heat for five minutes.
  2. Add mushrooms and sauté for another seven minutes.
  3. Remove heat and add broth, seasoning and ground chia seeds. Add a bit more ground chia seed if you like your gravy thicker.
  4. Transfer the gravy into a blender and puree. You can also use a hand blender but the texture will not be a smooth. Note: This gravy can be thinned out into a soup by adding extra broth!
