Ingredients
8 rice paper wraps
1 cup assorted berries or sliced fruit
1 cup quinoa, cooked
Pinch of salt
1/4 cup nut butter
1/4 cup assorted nuts and seeds
Yogurt, for dipping
Directions
Mix the cooked quinoa with a pinch of salt and nut butter, then set aside.
Dip the rice paper wraps in luke warm water and place down on a dry flat surface.
Add a variety of fruit to the middle of the wrap, leaving space all around the edges.
Add about two tablespoons of quinoa and top with any nuts or seeds you enjoy.
Fold in the edges and roll up tight.
Serve with yogurt for dipping.
