Fresh green pea salad

Ingredients

  • 1 bunch watercress
  • 400 grams shelled peas, fresh or thawed from frozen
  • 1 Granny Smith apple, cored and cut into matchsticks

Scallion dressing:

  • 1/4 cup (60 milliliters) sour cream
  • 2 tablespoons (30 milliliters) extra virgin olive oil
  • 1 tablespoons (15 milliliters) vinegar
  • 1 teaspoon (5 milliliters) sugar
  • 1/4 cup (60 milliliters) finely chopped scallions
  • 1/8 teaspoon (0.5 milliliters) salt
  • 1/8 teaspoon (0.5 ml) pepper

Directions

  1. Add watercress, peas, and apple matchsticks to a large bowl.
  2. To make the scallion dressing, combine sour cream, olive oil, vinegar, sugar, chopped scallions, salt and pepper in a glass jar. Put lid on jar and shake to mix.
  3. Pour dressing over salad and toss to combine.
