Fresh and fruity salad

Try out this deliciously sweet method at incorporating kale into your diet. Packed with vitamins and antioxidants, this salad is a great choice for lunch tomorrow!

TOTAL TIME

Ingredients

  • 6 cups finely chopped kale
  • 2 tablespoons white wine vinegar
  • 3 tablespoons olive oil
  • Salt and freshly cracked black pepper
  • 1 cup cooked long grain and wild rice
  • 1 apple, diced
  • 1/2 cup halved grapes
  • 1/4 cup dried cherries
  • 1/4 cup chopped almonds

Directions

  1. In a large bowl, massage the kale with the vinegar, oil and salt and pepper to taste. Transfer the kale to a serving dish and top with the rice, apple, grapes, cherries and almonds.
  2. Enjoy!
