Fattoush salad

Ingredients

  • ¼ cup extra virgin olive oil
  • ¼ cup plain yogurt
  • 2 tablespoons cider vinegar
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

SALAD

  • 2 pitas
  • Olive oil
  • 4 small cucumbers, thinly sliced
  • 4 radishes, thinly sliced
  • 4 tomatoes, chopped
  • ¼ cup thinly sliced red onion
  • ½ cup finely chopped fresh parsley
  • ¼ cup finely chopped fresh mint
  • 1 tablespoon lemon juice (optional)

Directions

  1. Preheat BBQ to low heat. Brush the grill grates clean. Brush pitas with olive oil. Grill until pita becomes crisp like a cracker. Set aside.
  2. In a large salad bowl, whisk oil, yogurt, vinegar, garlic, salt, and pepper together until creamy.
  3. Add in cucumbers, radishes, onion, parsley, and mint; toss to until the vegetables are well coated. Season with lemon juice, top with torn pitas and serve.
