Donut and avocado ice cream sandwiches

  • 2 cups whipping cream
  • 300 mL condensed milk
  • 2 ripe avocados
  • 2 tablespoons lime juice
  • 4 glazed donuts, cut in half
  • 1 cup mini semi-sweet chocolate chips


Ice cream

  1. Place a 9 inch loaf pan in freezer to chill while you prepare ice cream.
  2. In a large bowl of a mixer, add cream and whip until peaks form.
  3. Add condense milk and beat until well incorporated and creamy.
  4. Beat in avocados until creamy and stir in lime juice.
  5. Pour mixture in chilled loaf pan, cover top with plastic wrap and place in freezer for at least 4 hours or overnight.


  1. Place two large scoops of ice cream on half of the cut side of the donut. Top with the half and lightly squeeze to spread ice cream.
  2. Place mini chocolate chips on small plate and roll sides of sandwich in the the chocolate chips.
  3. Serve immediately
