Dark chocolate mousse

Ingredients

  • 1 can coconut milk
  • 5 large egg yolks
  • 114 grams unsalted butter
  • 1 teaspoon vanilla (optional)
  • 255 grams fine-quality bittersweet chocolate (not unsweetened), chopped
  • 1/4 cup coffee liqueur (optional)
  • Fruit of choice (eg: berries)

Directions

  1. Melt chocolate in double boiler or a metal bowl set over a pan of simmering water stirring frequently.
  2. Add egg yolks, coconut milk, vanilla, butter and coffee liqueur.
  3. Whisk together until thick and smooth. 
  4. Remove from the heat.   
  5. Spoon mousse into eight stemmed glasses or ramekins and chill.
  6. Top with berries and serve.
