Crunchy cucumber and feta sandwich

  • 1/2 avocado
  • 1/2 lemon, juice
  • 1/8 teaspoon salt
  • 2 slices sourdough bread
  • 2 tablespoons roasted garlic hummus
  • 1/4 English cucumber, thinly sliced
  • 57 grams feta cheese, thinly sliced
  • 1/2 cup microgreens


  1. In a small bowl, mash the avocado with the lemon and salt.
  2. On one slice of sourdough, spread the mashed avocado. On the second slice, spread the hummus. Add the cucumber, feta cheese, and microgreens. Top with the second slice of bread.
  3. Enjoy immediately.
