Croque madame

Ingredients

  • ¼ cup cream
  • 1 tablespoons mayonnaise
  • 1 teaspoon dijon mustard
  • ¼ teaspoon nutmeg
  • Pinch of salt
  • 2 slices country bread, one with a hole cut in the middle for the egg
  • 2 slices peameal bacon
  • 2 slices bacon
  • ½ cup gruyere, shredded

Directions

  1. Mix all ingredients together for the sauce.
  2. Place slices of bread on greased baking sheet.  Crack egg into one slice with a hole.  On the other slice, slather on some sauce and top with the cheese. 
  3. Bake at 375 F for 5 to 7 mins until egg whites are pretty much cooked through.  
  4. While this is baking, cook peameal bacon 3-4 mins per side, and the strips of bacon as well. 
  5. When 5-7 mins is up, remove and add some more sauce.  Then broil on high for 1 - 2 mins until completely cooked through and bubbling, golden and very crispy. 
  6. Top the side with cheese w/ the bacon, and peameal, then cover with the piece of bread with the egg.  Enjoy!
