Creamy bok choy

  • 4 cups (1 liter) bok choy, sliced in half lengthwise
  • 2 tablespoons (30 milliliters) canola oil
  • 2 tablespoons butter
  • 2 cloves garlic
  • 1 cup (240 milliliters) 35% cream
  • 1 tablespoon (15 milliliters) maple syrup
  • Salt and pepper, to taste


  1. Heat butter in a frying pan over medium-high heat.
  2. Add garlic and cook for one minute.
  3. Add cream and maple syrup, and bring to a light boil. Simmer for four to five minutes, in order for the sauce to reduce by a third. Reserve.
  4. Heat oil in a grill pan over high heat.
  5. Add bok choy to grill pan and lightly char on all sides for two minutes each.
  6. Remove bok choy from grill pan and put in cream sauce.
  7. Bring to a boil for another minute.
  8. The sauce should coat the bok choy completely.
  9. Season with salt and pepper, and serve immediately.
  10. Serve with fennel and root beer marinated sablefish (see recipe).
