Crazy vegan guac tacos

Taco filling:

  • Beefless ground round
  • Vegetable oil (for cooking the ground round)
  • Vegan cheese shreds


  • Avocado
  • Lime juice
  • Finely chopped red onion
  • Sea salt
  • Ground black pepper


  • Soft flour or corn tortillas
  • Crunchy corn tortillas
  • Vegan sour cream
  • Shredded lettuce
  • Diced tomato


  1. Brown the beefless ground round in a pan over medium heat with a vegetable oil of your choice. Once it's partially cooked, add vegan cheddar shreds all over the top and place a lid on the pan for a few minutes to let it melt. Once melted, keep the lid on to stay warm, but remove the pan from the heat.
  2. Prepare guacamole by combining all ingredients. Spread some guacamole on the entire surface of a soft tortilla and place a crunchy corn tortilla on top. Gently stick the sides to the crunchy tortilla. Add vegan ground round with cheese to the bottom and other toppings as you like on your taco.
