Christmas morning pancake mix

Perfect, easy, fool-proof pancakes for busy Christmas morning. Makes enough for three batches.



  • 6 cups all-purpose flour
  • 3 tablespoons baking powder
  • 1 ½ teaspoons baking soda
  • 2 teaspoons salt
  • 1 tablespoon ground ginger
  • 1 ½ tablespoon ground cinnamon
  • ½ teaspoon ground clove
  • ½ teaspoon grated nutmeg


  1. In a large bowl, combine the flour, baking powder, baking soda, salt, ginger, cinnamon, clove, and nutmeg. Pour the dry into a large jar and write up a tag with the following:
  2. To make 12 to 14 large pancakes, combine two cups of dry mix with two cups of buttermilk,
  3. 2 large eggs, one teaspoon vanilla, and three tablespoons of molasses. Stir just until combined. Fry up your pancakes and serve with lots of butter and maple syrup!
  4. Pop a bow on and you’ve got a perfect hostess gift!
