Chopped tomato, avocado and pea salad

A vegetarian delight that looks as good as it tastes.

Ingredients

  • 455 grams sweet cocktail tomatoes, quartered
  • 1 cucumber, peeled and chopped
  • 1 avocado, pit removed and cubed
  • 1/2 cup fresh summer peas
  • 1/3 red onion, diced
  • 1 big handful fresh parsley, chopped
  • 3 tablespoons fresh goat’s feta, crumbled
  • 3 tablespoons extra virgin olive oil
  • 4 tablespoons raw apple cider vinegar
  • Sea salt to taste

Directions

  1. Assemble all ingredients in a medium bowl.
  2. Drizzle olive oil and apple cider vinegar dressing over salad.
