Chilli cheese toast

A fiery snack broiled in the oven for a few minutes and packing a savoury, spicy punch.

Ingredients

  • 4 slices of bread
  • Olive oil
  • 1 cup shredded mozzarella cheese
  • 1/4 cup finely chopped red onion
  • 1/4 cup finely chopped green pepper
  • 2 tablespoons chopped coriander
  • 4 green chillis, thinly sliced
  • A pinch of salt and pepper
  • Crushed red chilli flakes

Directions

  1. Preheat oven on broil setting. Drizzle a little bit of olive oil on both sides of bread. Place on a baking tray and bake on broil setting for one and a half minutes on each side.
  2. Combine mozzarella, onion, green pepper, coriander, chillis, salt and pepper. Toss to mix, and divide equally amongst four slices of toasted bread. Sprinkle with red chili flakes.
  3. Place under the broiler once again, and bake until cheese has melted and is slightly golden.
  4. Cut on the diagonal, and serve piping hot. Enjoy!
