Chile cumin drizzle oil

A simple and spicy addition to your rotisserie chicken that cranks things up a notch.

Ingredients

  • 2 tablespoons ghee or butter
  • 1 teaspoon cumin seeds
  • 1 teaspoon crushed chile flakes
  • 1 shallot, minced
  • 1/2 teaspoon kosher salt

Directions

  1. To make the chile-cumin drizzle, in a small skillet, melt the ghee over medium heat. Add the cumin and chile flakes and fry the spices, stirring often, until the cumin is fragrant and toasted, about one minute.
  2. Add the shallot and salt and cook, stirring often, until it is softened and caramelizing, about five minutes.
  3. Remove from heat and set aside to steep.
