Chia pudding

Ingredients

  • 1 cup boiling water
  • 2 cups wild blueberries (frozen is fine)
  • 1 cup pomegranate or wild berry juice
  • 1 cup applesauce
  • 1/2 cup chia seeds
  • 2 tablespoons hemp hearts
  • 2 tablespoons pumpkin seeds

Optional:

  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 2 teaspoon sunflower lecithin powder
  • 5 drops organic stevia extract (if you like it sweeter)
  • 1 cup pomegranate seeds (about 1 pomegranate)

Directions

  1. Pour one cup boiling water over the blueberries in a bowl, mixing gently to thaw them.
  2. Add juice, applesauce, chia, and hemp hearts and stir until well combined.
  3. Mix in optional ingredients if desired and place overnight in the refrigerator to set.
  4. In the morning, divide the pudding mixture among four bowls and top with fresh fruit and seeds. If pomegranate is unavailable, other fresh fruit would do.
