Chia pudding

Ingredients

  • 2 1/2 cups (600 milliliters) coconut milk
  • 1/2 cup (120 milliliters) chia seeds
  • 1/2 teaspoon (3 milliliters) vanilla extract
  • 3 tablespoons (45 milliliters) honey
  • 1/2 teaspoon (3 milliliters) cinnamon powder
  • Pinch of salt
  • Sliced strawberries, for topping
  • Toasted shredded coconut, for topping

Directions

  1. Add chia seeds to a bowl
  2. In a second bowl, add coconut milk, vanilla, honey, cinnamon and whisk to combine.
  3. Pour mixture into a bowl with chia seeks and whisk to incorporate.
  4. Pour mixture into a mason jar or other container, and leave in refrigerator a few hours to overnight.
  5. Top with sliced strawberries and toasted shredded coconut.
  6. Enjoy!
