Chia pudding

With a little prep, this pudding turns into the perfect grab-and-go breakfast.

Ingredients

  • 1 cup (250 millitres) coconut milk
  • 1 cup (250 millilitres) plain Greek-style yogurt
  • 1/4 cup (60 millilitres) chia seeds
  • 1/4 cup (60 milliliters) unsweetened shredded coconut
  • 1 tablespoon (15 millilitres) maple syrup
  • 1/4 (1 millilitre) ground cinnamon
  • Pinch of salt

Directions

  1. In a medium bowl, whisk together the coconut milk, yogurt and chia seeds until the seeds are dispersed throughout. Stir in the coconut, maple syrup, cinnamon and salt.
  2. Pour into two small jars, cover and refrigerate overnight.
