Chia pudding with carrots and walnuts

  • ½ cup of chia seeds 
  • 2 cups of your choice of fluid: (full fat milk, almond, cashew, or coconut milk or soy beverage)
  • ¼ chopped pecans or walnuts
  • 1 small grated carrot
  • Cinnamon and ground nutmeg to taste (less than ¼ teaspoon each)
  • 1 teaspoon sweetener of choice: maple syrup or stevia or 2 teaspoons of raisins


  1. In a medium air-tight container, add chia seeds to fluid of choice. Place in refrigerator overnight.
  2. In the morning, scoop out ½ cup of the expanded chia seed mixture into a small bowl.
  3. Add carrot, chopped nuts, cinnamon, nutmeg, and choice of sweetener.
