Cheesy pumpkin dip

  • 1 cup pumpkin puree
  • 1-1/2 cups grated white cheddar, divided
  • 1 cup goat cheese
  • 1/3 cup caramelized onions
  • 1 teaspoon chilli flakes
  • 1 teaspoon kosher salt
  • 1 teaspoon cracked black pepper
  • 2 - 3 tablespoons chopped fresh herbs, such as parsley, rosemary or thyme
  • 1 small, hallowed out roasted baking pumpkin


  1. Preheat oven to 375°.
  2. In a large mixing bowl thoroughly combine pumpkin puree, half the cheddar, goat cheese, caramelized onions, chilli flakes, salt and pepper.
  3. Fill pumpkin with mixture and top with remaining cheddar.
  4. Bake dip for 20-25 minutes. To brown the top of the dip even more, switch on the broiler for the last two minutes of cook time.
  5. Sprinkle with fresh herbs and serve with crackers, veggies and pretzels. Enjoy!
